The secret to a good pub crawl: 1) Venues should be no longer than 5 minutes walking distance apart 2) They should be positioned so people will always be walking down hill 3) Having pints at each stop is just stupid.
FITZROY
Union Club Hotel: A good starting point with 3 outdoor areas. New rooftop deck does the trick.
Napier Hotel: In our top 3 of all time. Unpretentious with great craft beer on tap.
Labour in Vain Hotel: Awesome place to see some tunes or head upstairs to the heated deck. Coopers Dark on tap.
Standard Hotel: Generally regarded as one of the best beer gardens in town.
Commercial Club: The former stables out the back are a nice touch.
Marques of Lorne: The backroom with its grandma couches is ideal for naps.
Rose Hotel: Value for money food and best place to watch the footy on a cold night.

COLLINGWOOD
The Tote: Best place in town to see live music, but the front bar is also old school.
The Bendigo: Handy beer garden and friendly staff.
Barley Corn: Probably the only place in Melb that advertises to get bands.
Leinster Arms Hotel: Ignore the Collingwood FC stuff and it's good.
The Gem: Nice footpath tables, good beer taps and free rockabilly style music hit the spot.
The Fox Hotel: Rooftop deck, huge beer list and great food.
Gasometer Hotel: Killer burgers, Killer beers.

FITZROY NORTH:
Pinnacle Hotel: A quiet gem with an awesome beergarden.
Parkview Hotel: The front atrium is a good place for a few.
The Empress: In our top 5 of all time. Great horse shoe bar, nightly music and big food.
North Fitzroy Arms: Under the rader place that's worthy for a stop.
The Tramway: Recent renos have taken the shine off the place, but still worthy.
Royal Oak: Old school. You're my boy blue.
North Fitzroy Star: New School (probably Scotch or Wesley).
Lord Newry's Hotel: Friendly pub popular with footy fans.

Apologies to Richmond and South Melbourne, but these pubs are better and less yuppified.
